Steph's Beef & Barley Crockpot Soup!! =D

Ingredients Needed:

2 lbs stew meat
2 cups fresh peas-can use can ones though if thats is all you can find
2 cups snapped green beans-can also use cut green beans in can if you cant find fresh
1 small bag of mini baby carrots
5 medium red potatoes cut into 4's
salt and pepper
t tbsp garlic powder
96 oz beed broth
1 small bag barley

Directions:

Mix all ingredients in crockpot except for barley. cook on low for 8 hours, or on high for 5 hours..just be careful, you want the meat tender, but you dont want to cook the flavor out of it either.
about one hour before food is done, add barley, stir and cook remaining hour or so or barley is to your desired tendency!!

Serve with a good bread for dipping and Enjoy!  =D

Here is what I made for dinner yesterday, it was delicious! except next time I may put more chicken in it other then the cream of chicken soup!!  Either way it was really good! I hope you enjoy!!

Ingredients:

1 can chicken (TOTALLY OPTIONAL)
1 30 oz bag  of squared style frozen hashbrowns
32 oz chicken broth
1 family size can of cream of chicken soup
1 c chopped onions
Salt and Pepper to taste
1 8 oz block of cream cheese softened (optional)

Directions:

In crockpot, mix the potatoes, broth, soup, onions and salt and pepper.
Cover and cook on low for about 5 hours
About 30 minutes before its done, add block of cream cheese and cook for about another 30 minutes stirring occassionally.  I didnt use the cream cheese and it was still very good!

Top with shredded cheese of your choice and bacon crumbles!!

Serve & Enjoy!!!

This is a Serving for one...

Ingredients:

1/4 Cup of Dry Quinoa cooked to packet directions
4 Fresh Green Beans blanched in boiling water for a few minutes and then drained
6 Sun dried Tomatoes (I make my own in the dehydrator with dried herbs and Cracked Pepper and Sea Salt until really dry and rehydrate when I want to use them in hot water so they are virtually fat free)
50 Grams of Low Fat Lemnos Fetta Cheese
1 Small Sweet Potato roasted (see below)
6 Kalamata Olives Sliced
Balsamic Vinegar or Fat free Balsamic Dressing

What to do:

Toss it all together! That's it :-)


Slice your Sweet Potato in 1 cm slices. Throw into a snap lock bag with a small splash of Extra Virgin Olive Oil and some dried herbs of your choice. Toss them around in the bag to coat and place onto an oven tray lined with baking paper for easy clean up. Bake at 180 degrees until tender and a little crispy, approx 25 minutes depending in how much Sweet Potato you are baking.

AND for the main entree this evening, beings I seemed to have started posting with the dessert

Stephanie's Italian Wannabe Wedding Soup

Ingredients
2 lb lean ground beef-I used 80/20
3 egg, slightly beaten
4 tablespoons breadcrumbs
3 tablespoon parmesan cheese
1 teaspoon dried basil
1 teaspoon onion powder
11 cups chicken broth
4 cups chopped escarole or 4 cups chopped spinach
1/2 cup orzo pasta, uncooked
2/3 cup finely chopped carrot
grated parmesan cheese

I pretty much eyeballed it all because I make homemade meatballs all the time, this is 8 servings, cause we are pigs and will eat it two days in a row! to take it back to original 4 servings, just cut everything in half

Directions
In medium bowl combine, meat, egg,bread crumbs, parmesan cheese, basil & onion powder; shape into 3/4" balls.

In large sauce pan, heat broth to boiling; stir in spinach,carrot & meatballs & handful of parmesean cheese.
Let simmer for about 30-45 minutes so all the flavors can absorb one another and feel the love
Then the last 5 minutes before serving add the orzo and eyeball it because you dont want the orzo to suck up all your juice...let cook for like 5 minutes longer at a medium boil so orzo cooks, and orzo cooks VERY fast because it so small so watch it!

Stir frequently to avoid sticking.
Serve with additional Parmesan cheese sprinkled on top.

Salt & Pepper to taste

Here was our dinner tonight =D

Stephanie's Lasagna Soup

Yield 8 servings

Ingredients:
2 lbs hamburger-I used 85/15
1/2 tsp garlic powder-I used way more then that!
64 oz cans beef broth
2 can diced tomatoes(Italian)
1/2 tsp Italian seasoning
12 oz bag of Italian trio noodles-I used small shells
grated or shaved parmesan cheese-I used shredded parmesean
salt & pepper to taste


Brown hamburger with garlic powder; drain
Add broth, tomatoes and Italian seasoning; bring to boil
Stir in pasta. Cook over medium heat for 10 min or until pasta tender
Stir in small amount of parmesean cheese, let melt

Serve with additional parmesean cheese

Enjoy!!!!!

*Note: The next time we make it I am going to put a 29 oz can of tomato sauce in with it also to make it more lasagna tasting! Once in your bowl salt and pepper more to your taste!!  Yummmy

Tammy's Potato & Ham Soup

Homemade Potato & Ham soup.

1 32 Oz bag of Hash Browns
2 Cups ham
4 Tbs Flour
4 Tbs butter
4 Cups Milk
8 Oz Velveeta Cheese
1 Onion Diced
2 Diced Jalapenos (optional, i left seeds in mine but you can remove them)
1 8 Oz Sour Cream
Salt and peper to taste

Make a rue with the butter and flour, add onions and jalapenos.
Gradually add in milk while on med/low heat.
Add cheese until its melted, then add the ham and potatoes cook over med/low heat until ready to eat.
Just before serving stir in the sour cream, salt and pepper
